Brown is the color of love at this plush, posh lounge in thrall to whiskies worldwide: about 900 Scotch, bourbon, rye, Canadian and Tennessee types dominate a spirits list that management says is “more than 1,000” strong. The bottles are beautifully displayed on back-lit shelves, like starlets ready for their close-ups. Cocktails add to the wow, like the Elixir de Le Malt, a potion of gin, St. Germain and lychee purée. At dinner, single malts and cognac find their way into entrée sauces. Tapas such as black-truffle fries, lamb lollipops and bone-in quail all but shout date-night.—AC

Tatiana in Wonderland: James Beard House

An evening of fine dining took place at the James Beard House this month with Le Malt’s Spring plates on the menu. Selected by members of the James Beard Foundation, the New Jersey spirit and wine lounge was chosen to hold an exclusive “Malt Luxury” dinner with their Executive Chef Duke Estime leading the kitchen.

I arrived at the Beard House a little before seven and met with the ladies from Diaz Schloss Communications. I always have a great time at Diaz Schloss events and love catching up with their team. The weather for the night said there was a slight chance of showers, but we were rain free and enjoyed the warmer weather. We started the dinner by sipping on drinks made with Mezcal Joven and Glenfiddich in the garden with the other guests. I preferred the Glenfiddich drink over the Mezcal since I’m not too crazy about the smoky taste of Mezcal. I loved that inside each drink was an ice cube made with a hibiscus petal frozen inside, it looked so pretty. Since Le Malt is known for their spirits, it was only necessary to have each course paired with the perfect drink.

Dinner started with a Chilean Sea Bass Brothmade with spinach, basil, and cilantro. The warm broth had a slight spice that brought out the flavors of the delicate fish. It paired nicely with the glass of Castello Banfi San Angelo Pinot Grigio 2013, a great way to cleanse our palettes from the light course. Following the broth, we were served a Haitian Djon Djon Risotto with Wild Mushrooms. The impeccable (and my favorite) plate of the evening reminded me of comfort food: warm and soft; you want to eat it slowly and enjoy every last bite. Patrons will find Le Malt, Brown Spirits and Wine Lounge to be sexy, smooth, distinguished, rich, and sophisticated. This is not only a description of the 750 rare and varied brown spirits, the craft brews and more than 100 wines by the glass offered, but of the décor and ambiance. Le Malt, which recently opened, is the only establishment of its kind in the tri-state area.

What is your pleasure? Single malts, blended scotches, Irish, Japanese, Tennessee, Canadian and Indian whiskies, mezcal cognacs, bourbons, rums, tequilas, liqueurs, cordials, vodka, gin, red and white wines, craft beers and ports as well as a decanter of Macallan M, one of only 1,750 in the world that is priced at $12,000, are all exquisitely displayed on illuminated shelves encompassing two walls. There are booths for semi-private larger parties and special Chef’s Tasting dinners, plushy couches, comfy chairs, low tables, subtle lighting (check out the stunning Murano glass chandelier) and two, member only, VIP rooms.

A sophisticated cocktail experience awaited us at a recent gathering for the press. There is no bar, but award-winning general manager and master mixologist Richard Tandoc takes your order and then pulls the bottles off the shelf and brings a rolling cart to where you are seated to theatrically create your cocktail or pour your drink. Baseball shaped ice cube contain fruits, herbs and/or flowers. We were impressed.

Signature seasonal cocktails include the Boardwalk Empire (Maker’s 46 bourbon, infused bacon, house-made aromatic bitters), Royal Sangria (Johnnie Walker Platinum, infused red wine, fresh fruit) and Ferrari Martini (Mango rum, fresh pomegranate puree, edible flower). Prefer a shot? Opt for anything from a $10 shot of Jameson to a $750 glass of Hennessy Richard Cognac. Coming soon is the Billionaire Cocktail (Hennessy Paradis Cognac, Grand Marnier Cuvee 1880, Moet & Chandon Imperial, Moonshine) garnished with edible 23k gold flakes, served in a plaid crystal Tiffany Martini glass for $175. Be forewarned that there is already a waiting list. Also know that even bottles of wine are brought to your seating area and poured in Riedel glasses.

N.J.'s best bars: The 60 semi-finalists revealed

After thousands of posts and e-mails, and an awesome 170,000 votes cast online, we have the semi-finalists in our N.J.'s Best Bars showdown.

The top five vote-getters in each of the six categories we asked you to vote on automatically gained a berth into the semis. In addition, I selected 30 personal picks. That gives us 60 bars that will compete for the ultimate title -- best bar in New Jersey.

The toughest part of this week was not coping with the blizzard, but picking my 30 bars. There were so many worthy contenders, and many great bars were left out.

And several bars came oh-so-close to cracking the top five in the people's choice voting. A lot of people are crying in their beer right now, me included.

The red-carpet treatment can be expected daily by patrons visiting the third location of Wine Chateau and the company's neighboring venture, Le Malt Brown Spirits and Wine Lounge, which opened earlier this fall on St. Georges Avenue in the Colonia section.
